The short answer is because bread and cheese share similar chemical compounds.
The long answer is that both bread and cheese contain the same amino acids as a part of their protein content. For example, glutamic acid is found in both, and contributes to the savory flavors. Glutamic acid forms naturally in bread during fermentation, and also plays a role in the aging process of cheese.

When Celeste and I first met in Malaysia in 2011 and she told me she was from Wisconsin, I had to look it up.
I didn't know where Wisconsin was.
And guess what Google showed as the first thing about Wisconsin?
You guessed it...cheese.
When she brought me here, I went into the grocery for the first time, I didn't find the selection of small batch artisan cheeses that I expected to see.
I found a lot of Wisconsin cheese, but didn't find the quality and hand crafted curation that I was seeking.
When Celeste introduced me to Ashley Grant and Bountiful Boards, I knew I had found the place for artisan cheeses.
