This twice-baked Italian cookie is a not-too-sweet treat. Splendid to enjoy with a cup of tea in the sunshine or with a morning coffee. This balanced cookie has a nice crunchy outside, with a delicate blend of almond flour and spelt flour. A beautiful almond flavor is enhanced with toasted slivered almonds, to pair perfectly with the tart punch of a unsweetened Door County dried cherry.
